Blueberry Muffins

I also use the basic muffin recipe and pretty regularly change up the fruit in it.

Ingredients:
* 1/2 cup unsalted butter, melted and cooled slightly
* 2 eggs
* 1/2 cup whole milk
* 2 cups AP flour
* 3/4 cups plus 1 tsp sugar, divided
* 2 tsp baking powder
* 1/2 tsp salt
* 2-1/2 cups fresh or frozen blueberries

Directions:
1. Whisk butter, eggs, and milk in a bowl.

2. Combine flour, 3/4 cup sugar, baking powder, and salt in a separate bowl.

3. Stir wet ingredients into dry ingredients until just combined. Don't overmix. Gently fold in berries.

4. Divide batter evenly among prepared cups. Sprinkle with remaining tsp sugar.

5. Bake at 375 until knife test is clean and the muffins are golden brown, about 25-30 minutes.

Hash Brown and Egg Casserole

This is good for company...it's easy to make and really tasty!

Ingredients:

* 2 pound(ish) package of frozen hash browns
* 1 pound pork sausage (I like to get the sage breakfast sausage from the counter at Fareway)
* 1 small onion, diced
* 1 bell pepper, your choice on color, diced
* 5 eggs
* 1/2 cup milk
* 1/2 tsp garlic powder
* 1/8 tsp garlic powder
* salt and pepper to taste
* 12 oz plus extra shredded cheddar cheese for the top

Directions:

1. Preheat oven to 350. Grease a 9x13 baking dish. Place the frozen hash browns in the bottom of the baking dish.

2. Heat a skillet over medium heat and cook and stir the sausage, bell pepper, and onion until the sausage is crumbly, evenly browned, and no longer pink; drain.

3. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour evenly over the potatoes. Layer with the 12 oz cheddar cheese, the sausage mixture, and then the extra cheddar cheese. Cover with aluminum foil.

4. Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

Mama's Monkey Bread

This recipe makes me so happy in so many ways...this has been our Christmas morning tradition for as long as I can remember. We get up, mom and I both make the monkey bread and then we open presents while we smell it baking in the oven! You can cut it like a cake and then the individual pieces break off in delicious sticky finger-ness. :-)

Ingredients:
* 4 tubes biscuits (for vegetarian version -- make sure to check for lard)
* 1-1/3 cups sugar
* 2 teaspoons cinnamon
* 1 stick butter
* 1 teaspoon vanilla

Directions:
* Cut biscuits into quarters. Mix together 2/3 cup sugar and 1 teaspoon cinnamon. Roll each biscuit piece in sugar/cinnamon mixture. Drop into greased bundt pan.

* Combine remaining sugar, cinnamon, butter, and vanilla in sauce pan. Bring to a boil. Pour over biscuits.

* Bake at 350 degrees for about 40 minutes. Turn out onto a plate immediately. Best served warm.
